Summertime means grilled food and the freshest fruit. The two best foods of summer. Grilling fruit combines these bests of Summer. Sweet and juicy, crispy and smokey, seriously the best. Most recipes call for honey or oil, but these are so sweet on their own, and certainly crisp up just fine.
Ingredients;
Peaches,
Pineapples
(but you can use whatever you like!)
How To;
(For peaches;)
Rinse and dry.
Cut in half and scoop the pits out.
(For pineapple;)
Cut the top and bottom off.
Cut/peel the sides taking off the thick skin.
I sliced mine into eight pieces.
Using a knife cut the core out.
Fire up your grill!
Place the fruit on the grill.
(Be sure not to move it around too much,
to keep those pretty grilled lines intact)
Using tongs check to see until they have blackened slightly (3-4 min).
Flip using tongs or a spatula.
Once lightly toasted on the other side (about 2-3 min).
Use your tongs or a spatula to move to another plate.
Top with a scoop of vanilla bean coconut milk ice cream,
or garnish with a sprig of fresh mint,
or just enjoy them on their own!
