Who doesn't love Dark Chocolate? It's supposed to be great for you, full of antioxidants etc, but chances are that dark chocolate you are picking up at the market is full of a lot of unnecessary stuff, and it definitely is not vegan friendly. Taking on the task of making Raw Vegan Dark Chocolate sounds like a lot, but really, it is three ingredients + so quick and easy to make yourself, here's how;
Ingredients;
1/2 cup Coconut Oil
1 & 1/3 cups Raw Cacao Powder
3-6 tbsp Liquid sweetener of your choice
(I chose Raw Agave and used 3 tbsp,
but you could go for regular Agave, Maple Syrup,
or Raw Honey (for the non vegans))
Steps;
-Melt your coconut oil. It melts at 76 F. Mine was already melted.
If yours is not, fill a bowl with hot water and place the jar in the bowl.
-Pour 1/2 cup coconut oil into a mixing bowl.
-Sift in the 1 & 1/3 cups Raw Cacao Powder.
-Add in half of the liquid sweetener.
-Whisk until all ingredients are fully incorporated.
-Add more sweetener to taste.
-And you are done. Seriously that easy.
-I poured mine onto parchment paper in a baking dish and put in the fridge to solidify, then chopped into chunks, but you can do whatever. This stuff is incredible when you dip fruit in, or in your morning oats. Throw on some goji berries, shredded coconut, sea salt, peppermint extract, or orange extract, the options are endless! Play around to find which liquid sweetener suits you. And remember that coconut oil melts at 76 F, so this stuff melts around there as well. Keep it refrigerated. Enjoy some Raw Dark Chocolate Goodness!
Why Raw Cacao rather than Cocoa Powder?
Raw Cacao powder has not been heated past a specific degree therefore all the essential nutrients and enzymes remain intact, making this stuff good for you. Pointless for baked desserts but essential for raw desserts.
How is Coconut Oil good for you?
Coconut Oil is better than other Oils because while it is full of fat, it is MCT's rather than LCT's making it easier to metabolize and digest. One of the healthiest and most beneficial fats.

Hi, I tried this yesterday and it was a congealed mess, it wouldn't spread like yours does int he pic..... any suggestions for what might have went wrong, is it definitely 1 and 1/3 raw cacao?
