I have a serious love affair with Cadbury mini eggs. How to enjoy them other than by-the mouthful and by-the bag-ful? In cookie form. Like classic chocolate chip cookies but so. much. better. You can incorporate them into your favorite recipe or give mine a try. Perfect for Easter day, and perfect to enjoy with all of your Easter Basket leftovers.
Ingredients;
1 cup of softened unsalted butter
3/4 cup of granulated sugar
1 cup of packed brown sugar
2 eggs
2 tsp vanilla extract
1 tsp of baking soda
3 cups of all purpose flour
1/2 tsp salt
2 cups of Cadbury Mini Egg's
Optional;
1 cup dark chocolate chips
Sea Salt
Instructions;
Preheat oven to 350 F
In a stand mixer cream together the butter and sugars.
Add the eggs one at a time, then the vanilla.
Until smooth.
Add the baking soda.
Add the flour a half cup at a time.
Put the Cadbury Mini Eggs in a plastic bag, 1 cup at time.
Crush with a rolling pin.
Incorporate the crushed Cadbury Mini Eggs into the dough by hand.
Add dark chocolate chips if you would like.. I didn't but I think that it would add some depth!
I also think sprinkling some sea salt on top would be great.
Line baking sheets with tin foil or parchment paper.
Scoop the cookies onto the sheet.
I made two dozen.
Bake for 12 minutes.
