Who doesn't love pizza? I may not be one for greasy cardboard box traditional pizza, but in the summer, I love homemade pizza on whole grain crust with cheese, sauce, spinach, and grilled to perfection. However, for a healthy alternative raw vegan pizza comes in. This recipe is Vegan, Raw, and Gluten Free. Raw food is so important because it has not been heated above 115 degrees and therefore all of the essential enzymes and incredible nutrients remain intact. I went with a seed crust as it resembles the multigrain crusts I traditionally love. Covered with sun dried tomato sauce bursting with flavor and so delish that I could eat it by the spoonful, then a layer of easy cashew cheese and whatever veggie toppings I like plus a sprinkle of chia seeds. Such a fresh and delicious alternative to traditional pizza. Here is my recipe for DIY Raw Vegan Pizza with a Seed Crust, Sun Dried Tomato Sauce, and Easy Herb Cashew Cheese;
Seed Crust Ingredients;
1 cup walnuts
1/2 cup hemp seeds
1/2 cup raw pumpkin seeds
1/2 cup sunflower seeds
1 handful of fresh basil (or 2 tsp dried)
1 tsp dried oregano
2 dates
1/2 small onion diced
(optional 1 tsp of salt and pepper)
Sun Dried Tomato Sauce Ingredients;
1 cup sun dried tomatoes
(recipe for sun dried tomatoes here!)
1 cup chopped zucchini
juice of 1 lemon
2 dates
1 garlic clove
1 handful fresh basil leaves (or 2 tsp dried)
3 small tomatoes (I used pearl)
(or 1 large tomato, 2 medium tomatoes, or 1 cup cherry tomatoes)
Easy Cashew Herb Cheese Ingredients;
2/3 cups cashews (4-8 hours, this helps with digestion)
1/2 garlic clove
2 tbsp lemon juice
1-2 tsp dried oregano, basil, or rosemary
salt & pepper to taste
water as needed
Seed Crust Instructions;
Pulse ingredients together in food processor until fully combined. Separate and shape into whatever size and shape pizza you desire. I did 5 miniature circle pizzas, just larger than the palm of my hand. Dehydrate at 115 F for about 5 hours (or until crispy).
Sun Dried Tomato Sauce Instructions;
Put all ingredients into a food processor or blender and blend until smooth. Spread on pizza crusts.
Easy Cashew Herb Cheese Instructions;
Blend all of the ingredients together until smooth and spread onto pizza.
Top pizza with whatever veggies you prefer, i chose spinach, tomatoes, basil, and a sprinkle of chia seeds.
