The flavors of fall are my favorite, I love incorporating seasonal local produce into baked goods. One of my favorite fall breakfasts is Whole Wheat Apple Cinnamon Pancakes with Maple Syrup Butter. I've been developing and perfecting this recipe for awhile now. The pancakes themselves are healthy, made with only a little sugar, and completely whole wheat. And of course the Maple Syrup Butter is just so necessary. Here is the recipe;
Whole Wheat Apple Cinnamon Pancakes Recipe;
1 1/2 cups whole wheat flour
1/4 cup raw sugar (or other of your choice)
1/8 tsp ground nutmeg
1 1/2 tsp cinnamon
1 egg
3/4 cups organic skim milk
1/4 cup applesauce
3 peeled and grated apples
butter
Mix flour, sugar, nutmeg, and cinnamon together in a bowl.
Beat egg and milk together. Pour into the dry ingredients.
Pour in the apple sauce. Combine.
Gently fold in the grated apple.
Grease a skillet with butter.
Set the heat to medium.
Cook pancakes until golden brown.
Maple Syrup Butter Recipe;
1 stick of butter
1/2 cup of Maine maple syrup
In a pan, over low heat, melt butter into maple syrup.
Stir until combined.
