Summertime is made for picnics, cookouts, beach trips, and outdoor dinner parties. Fruit pies taste just like summer. This American Flag pie is made of blueberries for the blue part, and a mix of strawberries and cherries for the red part. You can use your own favorite recipes for the berries. And you can use homemade pie crust. I have also included some loose recipes for the berry fillings that you can also use. The design looks intricate and impressive but is actually pretty easy. Ingredients;
-1 package pre made pie crust dough
(homemade is even better- but if you are in a pinch, pillsbury works)
-1 egg yolk + 2 tbsp water
(for egg wash)
-sprinkle of raw sugar
-tinfoil
Blueberry Pie Filling;
-3 cups blueberries
-1/3 cup granulated sugar
-2 tbsp cornstarch
-juice of 1/2 lemon
-1/2 tbsp unsalted butter
Cherry/Strawberry Pie Filling;
-one third to one half can of cherry pie filling
-fresh cherries, pitted + de-stemmed
-strawberries chopped in half
-2tbsp cornstarch
Directions;
-Set oven to 400° F.
-Line a pie pan with pie crust.
-Section off a quarter with tinfoil.
-In a mixing bowl, mix all of the blueberry pie filling ingredients, less the butter.
-Set aside.
-In another mixing bowl, add the one third (or one half) can of the cherry pie filling.
-Add in an equal amount of fresh strawberries and an equal amount of fresh cherries.
-Sorry I did not measure- honestly it does not matter!
-The ratio should be 1/3 of canned filling, 1/3 cherries, and 1/3 strawberries.
-Pour the cherry/strawberry mixture into the 3/4 section of the pie.
-Pour the blueberry filling into the remaining quarter.
-Break up the butter into pieces and sprinkle over the blueberries.
-Cut stripes and stars out of crust and arrange onto the top of the pie.
-For the stars I free-handed but you can use a cookie cutter!
-Use remaining pie crust to arrange and clean up the edges.
-Brush egg wash over the pie crust.
-Sprinkle crust with raw sugar.
-Cover in foil.
-Bake covered for 20 minutes.
-Uncover and bake for an additional 10-20 minutes.
-I checked mine frequently- every oven is different!
-Let cool completely and serve... even better with vanilla bean ice cream!
