Happy Birthday to my beautiful photographer Katrina. We haven't been friends for long, but we've become so close so fast. Until now, I've never met someone who; appreciates a good donut as much as a good salad as I do, or someone who (not only puts up with me but) is right there with me taking 10 minutes to photograph a meal or a flower (regardless of where we are) and 4 hours to edit it all for Instagram, or who understands what "I found a wall" means, or who is as honest (blunt) as I am, or who is up for doing crazy things for photos with me (waking up at 4 am to not only catch the sunrise but to have a photoshoot in the sunrise, impromtu midnight parking garage shoot, the list goes on). Thanks for not only being an incredible photographer but for being a wonderful friend! Happy Birthday love!

Shades of Cool

(Outfit Details; sunnies, Free People. top, Free People. jeans, American Eagle Outfitters. shoes, H&M. bracelet bands, H&M. skull bracelet, Urban Outfitters. bra, DIY.)

Still loving the casual cool look of boyfriend jeans, and still more than obsessed with black strappy bras, especially when I make them myself like this one (and this one and this one). Also, this Free People top. I have never bought one item in multiple colors, but seriously couldn't not with this, scooped it up in white and black and it is sort of becoming second skin.

Photos by Lauren O'Neil, my way talented friend who just graduated the college I attend. I modeled for her thesis last fall (definitely more on that later), she is a wonderful graphic designer and photographer. She has worked for brands such as The Only and Karmaloop. Check out her website, her Behance, and her Instagram for more.

(^ and let's not get me started on how unreal Lana's new album is.)

I love the shape-less-shape, the square neckline, and the bell sleeves of this dress that all remind me of Winona Ryder in Reality Bites meets Stevie Nicks meets fairy meets Urban Outfitters perfection that I had been lusting over for quite a while when I received it for Christmas (thanks mum & dad!), I've been waiting for quite some time to show you all this beauty, waiting for the proper photo-op. Woke up at 4 am to take these, rolled out of bed, threw on the dress, quickly did my makeup, this explains the full-on evident bed head.

I love sunrises, everything is still and calm, the sun slowly rises, more and more colorful and bright, until it bursts across the whole sky, the calm glassy water reflects everything clearly. We should all see more sunrises (We should also be barefoot more often).

Raw Vegan Pizza with a Seed Crust, Sun Dried Tomato Sauce, and Cashew Cheese

raw vegan pizza edit

Who doesn't love pizza? I may not be one for greasy cardboard box traditional pizza, but in the summer, I love homemade pizza on whole grain crust with cheese, sauce, spinach, and grilled to perfection. However, for a healthy alternative raw vegan pizza comes in. This recipe is Vegan, Raw, and Gluten Free. Raw food is so important because it has not been heated above 115 degrees and therefore all of the essential enzymes and incredible nutrients remain intact. I went with a seed crust as it resembles the multigrain crusts I traditionally love. Covered with sun dried tomato sauce bursting with flavor and so delish that I could eat it by the spoonful, then a layer of easy cashew cheese and whatever veggie toppings I like plus a sprinkle of chia seeds. Such a fresh and delicious alternative to traditional pizza. Here is my recipe for DIY Raw Vegan Pizza with a Seed Crust, Sun Dried Tomato Sauce, and Easy Herb Cashew Cheese;

Seed Crust Ingredients;
1 cup walnuts
1/2 cup hemp seeds
1/2 cup raw pumpkin seeds
1/2 cup sunflower seeds
1 handful of fresh basil (or 2 tsp dried)
1 tsp dried oregano
2 dates
1/2 small onion diced
(optional 1 tsp of salt and pepper)

Sun Dried Tomato Sauce Ingredients;
1 cup sun dried tomatoes
(recipe for sun dried tomatoes here!)
1 cup chopped zucchini
juice of 1 lemon
2 dates
1 garlic clove
1 handful fresh basil leaves (or 2 tsp dried)
3 small tomatoes (I used pearl)
(or 1 large tomato, 2 medium tomatoes, or 1 cup cherry tomatoes)

Easy Cashew Herb Cheese Ingredients;
2/3 cups cashews (4-8 hours, this helps with digestion)
1/2 garlic clove
2 tbsp lemon juice
1-2 tsp dried oregano, basil, or rosemary
salt & pepper to taste
water as needed

Seed Crust Instructions;
Pulse ingredients together in food processor until fully combined. Separate and shape into whatever size and shape pizza you desire. I did 5 miniature circle pizzas, just larger than the palm of my hand. Dehydrate at 115 F for about 5 hours (or until crispy).
Sun Dried Tomato Sauce Instructions;
Put all ingredients into a food processor or blender and blend until smooth. Spread on pizza crusts.
Easy Cashew Herb Cheese Instructions;
Blend all of the ingredients together until smooth and spread onto pizza.

Top pizza with whatever veggies you prefer, i chose spinach, tomatoes, basil, and a sprinkle of chia seeds.

Homemade Raw Sun Dried Tomatoes DIY

I love sun dried tomatoes. When you take all the water out of a tomato it makes for a bright red jewel bursting with flavor. I went to the farmers market and picked up some fresh tomatoes. Sun dried tomatoes are so so simple to make;

Slice the tomatoes into halves or qaurters depending on the size.
Scoop out the seeds. (You can leave the seeds in but this doubles the dry time.)
Optional; sprinkle with chopped fresh herbs, I tried basil and it was lovely.
I think oregano would be fitting as well.
Place them on your dehydrator tray skin side down.
Set the dehydrator to 115 F.
(any higher and these are no longer raw, the essential enzymes would not remain intact)
Without the seeds they took about 15 hours, with the seeds they took about 20.
However, the time really depends on the size of the slice and how juicy the tomatoes are.
I would check every 4 hours or so.
The 'sun' dried tomatoes should sort of feel like a raisin.
Enjoy, these are lovely as a raw sauce, on salads, as well as on their own!

Birch Bark Planter DIY

I love plants, I love having indoor gardens of cacti and succulents. But I do not love the color of traditional terra cotta pots. However I do love trees, specifically birch trees. I love the texture and the nuanced white and grey colors of their bark. Every time I see a birch tree I see if any bark has fallen, I come back from trail runs with arm fulls of birch bark. I love finding ways to incorporate nature into decor and these birch bark planters are the perfect way.

Terra Cotta Pots
White Matte Spray Paint
Birch Bark
Hot Glue

Evenly spray paint the terra cotta pots.
Do so in a well ventilhated area on a covered surface.
Let the spray paint dry.
Using hot glue, cover the surface of the pot with birch bark.
They are now ready to fill with soil, succulents, and cacti.

I made these last August and I still love the atmosphere they bring into my dwelling.
