Mornings at The Treehouse; waking up slowly (without an alarm), stovetop espresso, records spinning in the corner (playing Father John Misty), windows wide open, and breakfast in the making. Eggs Florentine Benedict with Turmeric Poached Eggs and Easy Hollandaise Sauce. Read on for a step by step tutorial;
Ingredients;
Hollandaise
-4 egg yolks
-juice from half a small lemon (1 tablespoon)
-1/2 cup unsalted butter (1 stick)
-teaspoon turmeric
-pinch cayenne
-pinch salt
Turmeric Poached Eggs
-6 eggs (I love Vital Farms Eggs)
-apple cider vinegar
-turmeric
Eggs Florentine Benedict
-6 whole wheat english muffins
-baby spinach (I use I Love Organic Girl)
-tomatoes (the fresher the better!)
-pepper
-red pepper flakes
Easy Hollandaise Sauce Recipe;
-Melt butter over the stove in a small frying pan. Set aside.
-Whisk the egg yolks and lemon juice together in a stainless steel bowl until it has thickened and doubled in size.
-Place the bowl over a saucepan of of simmering water. The water in the saucepan should not touch the bowl.
-Continue whisking rapidly.
-Slowly drizzle in the melted butter.
-Continue to whisk until the sauce has thickened and doubled in volume.
-Sprinkle in turmeric, paprika, and salt.
-Whisk to combine.
-Cover and set aside in a warm place until it is ready to be used
Turmeric Poached Egg Recipe;
-Fill a stockpot or large saucepan with water about 2/3 full.
-Bring to a boil.
-Reduce to a hard simmer.
-Add one or two tablespoons of apple cider vinegar to the water.
-Add a few dashes of turmeric to the water.
-I never measure these two ingredients!
-Swirl the water and crack an egg into the water.
-I poach three at a time, waiting a few seconds between adding each.
-Use a slotted spoon to check if they are done.
-They should be tender to the touch so the inside is runny and the whites are fully cooked.
-This is about four minutes- but I never time it.
Eggs Florentine Benedict Recipe;
-Split the english muffins and toast/butter in the saucepan that the butter was melted in.
-Rinse your spinach.
-Slice the tomatoes.
-Top each half of the english muffin with spinach and a thick slice of tomato.
-Add a poached egg.
-Spoon on the hollandaise sauce.
-Top with cracked pepper and red pepper flakes.
-Enjoy!
